Today is my first blog entry for All Fur Love Pet Care. Luckily for me, it falls on one of my favorite holidays—Valentine’s Day. If you are like me, you have the most beautiful four-legged friend in your life. Who could find a more fitting day to surprise them with a treat! In my case, the handsome devil is Pip. People who know Pip know that he is the Sherriff of Lafayette. He is known for patrolling the off-leash hills of Briones making sure dogs four times his size abide by the rules. By the way, Pip is a ten pound Chihuahua. Pip is also known as the “Prince”. I don’t fool myself thinking I have any control of his behavior. I am simply his servant. If he wants to relax on the couch or any other place, he’s going to sleep there! Shamelessly, I have given Pip celebrity status on my blog because I think he is the sexiest guy around in my life. So, in honor of this special day, I thought I would offer a recipe to make for your prince or princess.
Rachel Ray’s Valentine’s Day Sweet Pooch Pancakes
- 2 large eggs
- 1 cup milk
- 1 1/2 tablespoons butter, melted, or vegetable oil
- 1 tablespoon honey
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- Cooking spray
- 2 cups sliced banana, berries and mango
- 1 cup plain yogurt
Serves 16
Preparation
- Pre-heat a griddle or large nonstick skillet over medium heat
- In a medium bowl, whisk together the eggs, milk, butter and honey
- Gently whisk in the whole wheat and all-purpose flours, baking powder and cinnamon
- Spray the griddle with cooking spray
- Drop the batter, 2 tablespoons at a time, onto the greased griddle
- Cook the pancakes until bubbles begin to form and break, about 3 minutes
- Press a few pieces of fruit into each pancake, then flip and cook until brown on the bottom, about 2 minutes
- Drizzle with the yogurt and top with the remaining fruit
